Everytime I load it I get a prompt to update to 1.16 which is buggy, the check itself adds extra seconds to the startup process, can it be turned off?

Just block outgoing network connection. I recomend to use Little Snitch.

yeah use firewall to internet. but why block updates? soon comes amazing bitwig 1.2 :D

Blocking connections is no solution, there needs to be an option to turn off the automatic check.

So I can download and install updates in my own good time and when I am confident they are stable, I don't need or want to be nagged about them every single time I start the app.

Nope - it's still going to waste time trying to check - don't want workarounds, I want to be able to turn this off

indeed, I am getting performance issues and ramdon freezes in 1.1.6
