There are lots of inter-app compatible apps but why only few of them show up as Cubasis midi-instruments,
what is the difference? Using iPad Air and (still) latest ios 7.

There 2 types of IAA instruments
IAA midi instruments where IAA midi controls the instrument
And
IAA generator instruments which can be recorded by creating an audio track and setting the routing to the IAA instrument. Most of the Audiobus Compatible apps that became IAA compatible just because it was required for Audiobus purposes come in this category.
Confusingly you can set up a midi track in Cubasis linked to one of these and record the audio into a separate track.
