1) Is there any possibility to avoid open and closed hat sounding at the same time? When closed hat is hit, the sound of open hat should stop - as it has been closed. Could be solved with a gate, that closes with note-on of CH and opens with any other note. But I didn't find one as well as I found no possibility to tweak MuDrums that way ...

2) Is there any possibility to adjust the note-on-velocity-level of the trigger-pads? When testing different samples it's a bit misguiding to have them at max. level.

Yes, this can be controlled by the length of the notes you're sending. Make sure to have a short enough release time though so that upon receiving the note-off the sound is muted fast enough.

Clicking away from the center of the drum pad has lower velocity, so that way you have some control over the click velocity.

This velocity-thing within the pad-area is great - would be worth to be mentioned in the manual ;-)
Sound-control by note-off is some kind of work-around to me. OK, when I write my drums myself. But a problem if one uses bought midi-files, as drums usually are triggered by short notes, thus needing the release. Therefore it would be better to "kill" the open hat with a gate controlled by note-on of the closed hat.

I understand your point. It's on the wishlist to add a module that can do 'note choking'. So then this module can be put in front of a MuDrum and then that will deliver what you want. Can't yet give a time estimation though.
