a rock/metal record I really really like is deftones "koi no yokan". The rest of their repertoire is a bit hit and miss for me at times but that record has everything going for it...needs a few listens to get familiar with the song structures, but must check it out

If by "instrumental" you mean "without vocals", you need to check out "post rock". Caspian, Explosions in the Sky, Yndi Halda, Mogwai, Godspeed you Black Emperor, etc.

I think op would more be into Europe, Bon Jovi or Extreme.
That said, Iron Maiden are a good recommendation, as they are about as heavy as tissue paper. Especially, with Bruce's ultra high pitched squeals.

My metal listening days are long gone, but the one band that I still occasionally check if they've got new material out is called Finntroll. There's screaming, but for the most part it's in the most trollish language ever known to man, swedish, and it fits the aesthetic. Plus good keyboard stuff as well. Filed under "folk metal".
