SFZ has been around since 2004, it's open (explicitly put in the public domain) and it allows simple through to very complex mapping (with version 2). It's quite widely supported, too.

Installing the Kontakt 5.6 update, led to that FL Studio couldn't find Kontakt anymore

So I uninstalled Kontakt 5, downloaded the demo from NI, and reinstalled, that fixed the issue.

But that meant I had to reauthorize Komplete/Kontakt in the NI service center. I hope it does not count as one more installation, because then I am out of licences
