The pi installer is only about 15Mb or so, so I think its just Waveform, nothing else.

Is there really no demo for Waveform on Pi? I need to test it before buying.

Demo Download site for waveform. To get there I have to give a name and email. I can see "Windows-Bundle" - "Mac-Bundle" and "Linux-Bundle" -but did this Linux Bundle contain the Raspberry build? I think not.
Where is the Raspberry Pi Demo hidden? I want to evaluate this software.

Yes there is no demo, and it is only available in Waveform at the moment but in do time it will be a Boi Tek and Daw Essentials release on te Pi.

I got a new Raspberry Pi 3 recently and I have a Waveform 8 license , I tested it just today , it installs without Collective or the BioTek demo so I have not tested those, I used a KORG nanoKEY Studio MIDI (I have not tried to use it via Bluetooth only USB connected) controller and a Behringer U-Phoria UM2 DSP, I used the basic FM generator VST plugin that comes with waveform and it works good, I haven't had the chance to test other things, but so far it does the job, my intention is to have a portable rig when I travel.
I'm not a professional musician, it's just a hobby.

The only thing I see in the download archive is a Collective installer archive, including a Linux version.

I have Waveform 8, so under My Downloadable Products: I see a RasPi download for "Waveform-installer-64bit-rpi-8.1.2.deb".

What's latency like?

I assume a DAC is an extra bit of kit required?
