Have to add to the list Rick Vito's solos (especially the second one) on Bob Seger's "Like a Rock". Forget that the song's been a Chevy jingle for the last 10 years, Vito plays a wailing slide solo that'll give ya goosebumps, and it complements the song as opposed to being a wank-fest.

Robert Fripp's guitar work on "Starless and Bible Black" is some of the most articulate picking I've ever heard.
Even if you slow it down and transcribe it, you won't be able to play it cleanly at real time.

Buck Dharma--apparently touched by God--no, Satan, what was I thinking--at the end of "Dominance of Submission" on Blue Oyster Cult's "Secret Treaties". By the end of that raveup I am ready to fall on my knees and smell the glove.
