Use a simple OSC, sine wave. Play notes, depress sustain pedal, let go of the pedal, the notes will still continue. The little 'antenna' in the top right corner, window bar, has to be pressed to stop the sounds.
Put another synth on another track. Eg. Rob Papen's Predator2. Choose an appropriate shorter sound, like Jomal EL Piano. Play notes, depress pedal, let go of the pedal. The sounds are stopping immediately as the pedal is released.

Please send me a Bitwig project to info@meldaproduction.com, this has been checked many times of course, but I suppose it's possible to make settings that will somehow make things go wrong...
