Say I want to use a free running LFO in a modulator and S/H it whenever a key is hit.
With the S/H value I would like to modulate the filter cutoff.

This is taken from following link which describes how "kraftwerk" have built sounds on the Odyssey for the long player "computer world": https://www.keyboardmag.com/lessons/a-kraftwerk-odyssey
See section "THE RISE".
Quote: "Step 2: To apply this modulation, you’ll need to use the S/H Mixer, selecting VCO-1 sawtooth as the input and raising the value to maximum. Additionally, you’ll want to switch the S/H trigger to keyboard, so that each key event passes the sawtooth through wherever it is in its cycle."

I don't know how to set this up in MSF. Me is a dummy, sure, but it feels a bit awkward that in a modular system I cannot simply use an OSC, route it thru S/H and in turn use that as modulator...hm.
Did I miss something.

Update: It was a matter of only two minutes to setup the basic structur in Bitwigs Grid.
Slow free running Ramp LFO -> S/H which is triggered by key press -> filter cut off

IF I understand correctly you are looking to modulate the Cutoff Frequency with a different (random) value.
Try using one of the "random" modulation sources in the per-voice Modulation window.

Here I have used "Note Random 1" for both the Frequency and Panorama. Every note changes the values:

Thanks DarkStar - Sure Random per Note is quite similiar, BUT...the Kraftwerk Sound was actually a Ramp Up thingy. Think about the LFO as a Ramp Up Saw Tooth. It was free running. Then a sequncer played 1/16 notes along the LFO, whenever a note was played the current value of the ramp up saw was S/H and used to mod the filter cutoff... If you listen to the Track I think you get what I mean.

You can clearly get the ramp movement, i.e. filter cut offs getting step wise higher for notes following each other until the ramp is reset. if you don't use song tempo synced LFO then you get different results for each sequence of say 16 notes.
