Using Hive2 8676 in Bitwig 2.4.3, wiggling the XY controllers, the Y aspects of the controls are always reported to Bitwig so they surface up at the top of the list of the Bitwig device, ready to get some modulation assigned to it.
Not so with the X aspects. They do not surface up and have to fished out of the long list of parameters.
This is on Linux although I'm not sure if Linux matters in this case since the Y parameters are reported correctly.

Could be because first X is sent then Y is sent, and BWS will always show the latest received parameter.
You have individual knobs display mode in XY section, use that.

Yep, if you just turn the XY ball, it will always adjust two parameters (X and Y) at once. But Bitwig's device panel can only show one parameter at a time at the top, thus you see the Y.
You can go to the XY section in the hexagon, and choose the third display mode.
There you have individual knobs for the X and the Y axis. Move the X, and it will show up at the top of the device panel.

Fastest I would think to use the bitwig device search and search for 'X', map each one to a knob on the device panel (alternatively modulator knobs) and include this in your default bitwig device preset so you dont have to dig for them again.
