I'm trying to create an OSC (Open Sound Control) controller for Waveform 11, but I can't find any documentation on which OSC messages are supported by the Waveform application. Is there some specification or examples available somewhere?

Yes, there are two examples. Create a new OSC surface and the click the import button. There are two templates for TouchOSC.
Then click the edit button to see how it's setup.
You can type any OSC path you want and select what function to control from the menu.
