The lists are displayed in the wrong font size and do not respond to selection. This happens in both Waveform 11 and Live 10 when hi-res is used (which is necessary for me as these GUI's are blurry otherwise).
I just tried that in Cakewalk by Bandlab w/Windows 10 (and in the standalone version) set to the full/high resolution setting of Triton, and the menus for both of those worked fine for me in Combi mode for Arp A and B.

TL;DR

I used Korg Software Pass or whatever it was to update all the individual plugins to the latest versions, so I'm good there, but I can't for the life of me figure out what the scoop is with upgrading the whole bundle to Collection 2. I migrated to Korg Collection and then bought Odyssey as an individual plugin. I swear I'm reading it as if I should be able to get the full Korg Collection 2, though I don't really care if I get Triton or not.

Downloading the new versions of the plugins IS getting Collection 2. You don't get the Triton for free, it costs like 249.

Yes, I tried it in Cakewalk also, and it worked fine, as you report. It also works ok in Ableton if you take Ableton out of hi-res mode. But there is a problem with hi-res.

Yup, I tested it in Cakewalk also and you are correct. It messes up when the DAW is set up to use hi-res mode. I don't think Cakewalk has that.

Do I need to un-install the Legacy Korg Collection Instruments before installing the new Korg Collection 2 ?

I didn’t. Haven’t seen a problem as a result that isn’t just bugs in the new GUI.

So someone in the ReasonTalk forum reports the following -- he had the same crashes on a Mac as reported here (MonoPoly and Wavestation, when clicking 'program manager' and 'search' respectively) -- so he updated to Catalina, and reports that the crashes stopped after that.

According to Korg's spec it's *supposed* to work as far back as low Sierra, but I'm guessing they didn't really test the old OS's much (or at all). Apparently Catalina will resolve it (and probably break a hundred other things, meanwhile, ugh).

It isn't necessary, but keep in mind that the new versions will overwrite your old plug-in .DLL files. If you want to keep them temporarily (to troubleshoot problems, for example), you might want to re-name the original .DLLs in your VST plug-ins folder. That way, if there's a problem, you can un-install the new version (if necessary), and/or just re-name the .DLLs to switch back to the old versions temporarily.

Here's some of my stuff: https://soundcloud.com/shadowsoflife. If you hear something you like, I'm looking for collaborators.

Or just create a separate folder to install them to and then add the path to your DAW(s). Then you should have both.

Can't you just go up to Mojave?
