Can anyone tell me what instrument comes in at 2:51 in this? Or at least how I could replicate the sound?

Any help greatly appreciated!

I don't remember the name, but its a middle eastern wind instrument ... maybe a Dudek?

Sounds like a zourna.

Here's a freebie that will give you the sound but you will probably be better off going for something commercial or a soundfont.

Thanks for the reply, I don't suppose you know any VSTs or the like that I could use? I haven't been able to find anything yet.

The dsk link above is a free vst that has a number of asian instruments including the zourna. Here's the link again.

Sorry, the description and showcase video didn't seem to mention it so I had assumed it wasn't included in the vst.

I'm so sorry - I could have sworn it was that vst. No this is what I was thinking of:

Reason doesn't support 32-bit plugins.

You might need to use a bridging software, like those:

You could probably synthesize something quite simular with a narrow pulse wave. I'd say 80% of a convincing emulation is in the playing technique (pitch bends, decorative notes {that is not the word I was looking for but can't think of it} and possibly using a micro tuning scale)

I'm pretty sure I could replicate that with Respiro. You'd need a wind controller or at least a breath controller along with a keyboard to pull it off.

or just get some samples, eg: https://freesound.org/search/?q=zurna

Yeah, it’s a zurna. Probably the Safwan Matni VST or a live one.
Probably could do that with a pulse wave and resonance without a filter envelope.
Many paid and free VSTs as well as Kontakt libraries. As well as HW synths/drum machine and acoustic instruments.
