I'm trying to multitrack several USB devices on my MacBook using Waveform 11 and can't seem to pull it off. All my devices are recognized, but I can't get them to be assigned to individual tracks. Any suggestions?

I don't think Waveform has the ability to use multiple audio input devices at the same time. If you want multiple inputs it's best to use a device with multiple inputs. Some drivers might have the ability to combine devices. I've read it can be done using ADIO4All but I don't have any experience with that.
Surely there must be consensus by now...

Core audio allows this. You need to merge your devices in macOS audio-midi setup. This will cause great latencies though.
I can't think of any daw supporting multiple interfaces. (and I used a lot of different daws).
(cheapest way to get a lot of inputs is an interface capable of adat)
