So, bit for bit GS business as usual. I have two music systems, a macbook pro and a pc.... I try to keep them as compatible as possible, so any word I start on one I easily transfer and continue on the other.. I have Cubase on Mac and Nuendo on PC.

No you can't migrate your Data from PC but not many of your program or settings.... That is Audio files, DAW project files etc are compatible on both, but for the most part not settings (although like Nuendo PC settings are compatible with Mac PC settings etc).
So yes consider you have to reinstall every program and plugin on to the mac.

Are you able to use both systems together simultaneously? I've heard RTP Midi can connect 2 computers together but not sure how well it works yet.

I'm thinking I'll definitely make the switch over and hopefully I can sync up the two computers for the time being until I get around to installing everything w/ RTP Midi.
As far as the Mac Mini ins and outs go would an ASIO interface work on Mac or would I have to get a Thunderbolt interface? I think if my ASIO audio interface didn't work that would be a potential deal breaker for me honestly.
Kinda like running Cubase 1 in an Atari emulator.
They can't use the same interface at the same time afaik.
