why bitwig 3 does not show all the au version of the plugins on OSX 10.15.7 ?

No, but it's a waste of space on my ssd. Every other DAW I use on OSX : Reaper, Logic and S1 can use AU.

It's not a waste. There is almost no plugins that don't have a VST version as well as an AU plugin so let's be honest this is not really an issue. VST, AU it doesn't matter there are no differences in-terms of plugin performance or behavior other than Logic can only use AU. Any VST of size 500 MB is badly programmed, as the samples are baked in, instead of allowing to store them on an external disk. Most plugins are much much smaller...

Aren't most presets, samples and graphics shared across plugin types? So it is usually more like 500Mb to install and then the additional plugin version adds only a fraction of that. I use Bitwig and Logic, but have never paid attention to how much space plugins take cause I mostly use synths and not lots of sample libraries.

There isn't one plugin in my hundreds upon hundreds of installed plugins that take up 500MB. Kontakt's AU is 71.9MB, the same for the VST version. Most plugins are usually sub 100MB in size, most ranging in the 30-ish range. All of U-he's plugins are sub 20MB. The latest version of Ozone is 55.3MB. Basically your argument boils down to just ranting about Bitwig not having AU support, despite it not really being necessary. Logic is the outlier here. All major DAWs support VST, Logic is the only DAW that doesn't without some kind fo wrapper. There are very few plugins that are AU only, installing both VST and AU does not take up any significant space as you implied. It's a non-issue.
