I've got an old American Strat that badly needs the pickups replaced...I'm completely lost on what's out there these days in terms of pickups. I'm looking for a good funk sound that generates a nice sound for single note muted plucks....Any recommendations?

Ones that are pretty much exactly like the ones that ship on the strat to begin with? I mean, funk is right there in the basic strat wheelhouse... I assume there are technical issues with your current pups?

If you want to take a deep dive, read here:

There a a lot of one-man-show pickup winders who sell hand-wound pickups of good quality.
If you don't want to wait too long, you should probably order from a seller on/near your continent. Here are some which usually get good reviews:
UK:

Croatia:
https://www.qpickups.com/
https://www.ebay.de/str/qpickups
(I bought a nice Gilmoure-inspired set there. Took about 2 weeks to ship to Germany.)

Personally I never tried them, but I read good things about these, and they are certainly not over-prized for being handmade in Germany:
