I thought of that for Gatekeeper as well - can be done in lots of DAWs but I favoured an easier single solution - Duck seems to be that as far as a VST goes - really quite elegant and simple and easy to use across the different DAWs. A plugin wont do what you want. Instead you need to work directly off audio and use a sampler, slice it then use the envelope on it to shave the attack. The one in falcon can do it as well as ableton.
If you have falcon:
you use the slice oscillator, drag your sample in, engage envelope and shift the attack. The attack at each transient point will be adjusted. Also works for decay. I've done this before with acoustic guitar.
I take it Kontakt can do the same, not sure??.

I now have plugins that do what I want. Don't fancy adding individual envelopes to each note or chord from a 40 minute recording. Yeah Duck can do transients side chaining off a copy of the file it works from. Is very good. Well the fact you're asking for plugins indicates you dont have the ones you want and based on the ones mentioned, you dont. You wont be able to get close to a violin instead of a hard attack and visa versa using any of the above plugins. You could set this up with almost any of the Melda production plugins and the mod section they use. Just modulate the output level with the audio triggered envelope modulator. I often use this to change the wet/dry mix in an interesting way depending on the input but there's no reason you couldn't just activate the "free" bundle and do what you're suggesting.

Why not just use any level adjusting plugin (most of the Bitwig devices have a level control) along with a Bitwig adsr that's triggered by audio? Seems more flexible than a transient shaper for the actual gain adjustment part. I still don't really know what the end result is supposed to be though. Thanks for that suggestion which I will explore. I am wanting something like this probably in the future generally but specifically now for a 40 minute piano performance of a Morton Feldman piece recorded in a neoGothic chapel in London. Sounds more like a treatment for the recording. 40 minutes Morton Feldman is a short one…
Live treatment in such a setting is close to impossible, usually you would not setup an amplification for a solo piano in a chapel, and if, you would not boost it much above the direct level. That would not allow to make fast transients slower…
