Looking at some of these, I'm reminded of when I used Cakewalk (eventually Cakewalk Pro Audio, but even predating sample/wave functionality), and I really sort of miss having a score view. I tended to use that a lot for orchestral stuff I did back then (on my Kurzweil K2000RS with 8MB Orchestral ROM).

Sonic pie is actually using the supercollider synth engine and is focussed on live coding .
You can do all of this in supercollider , a fried of mine does everyhing live in supercollider , hard banging techno stuff .
It's amazing but it's a pretty deep learning curve .
With just a few lines of nested code you can do amazing stuff
Supercollider is now on 3.12
