If you want an advice: Forget about it. There isn't the one soft synth which does everything in great quality. There are a few which come close (no freeware for me), but, there's always one which does a particular thing better than the other. this is not exactly true. The next version of surge will re-implement the current GUI in JUCE and add features but the GUI will be basically the same. Phonec is awesome for pads, its probably what it's strongest at. I don't understand your comment at all. Maybe stick with the basics for now and learn how to get as much as possible out just a couple of free synths.
Try some free ones and check how those feel. Vital is a good one.
I would say that Surge isn't the most obvious choice for a beginner, imho
