I like the idea that whatever is used most should be top-level. To me, mouse modifiers are not top-level but one step removed. We might all have a different order but mine is something like:

1. Left click
2. Left double click
3. Right click immediate action
4. Wheel scroll
5. Wheel button
6. One key modified click
7. Two+ key modified click
8. Right click menu
9. Separate tab
10. Menu bar
11. Pop up
12. Separate full window
13. All the above within separate window
14. Separate application
and so on...

I'm sure UX studies have been done about this. Even so, that doesn't mean everyone, including me, have seen those results or follow them.

Really? Which ones for example? I can't think of any plugin that I own that resets parameters on option+click. In my experience it seems to be 90% double click.
Softube, Logic's native plugins, U-he, D16, Valhalla, Kush, Fuse Audio, WavesFactory, Antares, Tone Projects, Waves, Oeksound, iZotope, Pulsar.
So that's... 14 against 3 from the previous post.
80%, not 90%. close enough

Ok I see. Even tough the ones I own from your list (D16, Valhalla, WavesFactory, Waves, iZotope) all work with double click too (except for Waves). Strangely D16 ones on my system don't work with option+click, only double click.

I'm not a fan of the new behaviour, especially given the chained menu clicks bug shown by Dakkra earlier in the thread.

I would be less bothered if it was right click, followed by just a single click in the contextual menu. But still, would prefer it to be controlled by mouse only. If it stays like it is, it would be great to have the option to retain legacy behaviour in the settings.

I'm open to the shortcuts being overhauled as mentioned above - ie left double click to default and right click to enter a value - or some other similar option. I don't really want a modifier key and mouse click to get to default - I use it too much.

Update to 15.00k and you'll get the option :)

Argh, sorry, no, D16 doesn't, it works with Shift+Click ( )

So i guess Double Click and option click are the most prevalent options.

At first I thought it was a Beta thing. Definitely annoying. Melda plugs are ones where you use trial and error a lot due to their complexity, so resetting values is something we do all the time. Double-click, Ctrl-Click or the old way of Right-clicking are definitely needed. The menu that now pops up is something that requires the same amount of clicks (at least in Reaper) just a bit higher in Reaper's plugin window, while resetting the values now requires clicking + typing, or clicking several times.
