Mac Mini M1, Reaper or Logic:

Some of the plugins like Acustica Nebula I can load directly in my DAW. But when trying to load them via Patchwork, the DAW freezes or I get a notification "Please check that this is a compatible 64-bit VST3 plug-in." BTW the other Acustica Plugins I can load into Patchwork. But Nebula won't work.

I tried different options like:
Reaper: Patchwork (VST) -> Plugin (VST)
Reaper: Patchwork (VST3) -> Plugin (VST3)
Reaper: Patchwork (AU) -> Plugin (AU)

Logic: Patchwork (AU) -> Plugin (VST)
Logic: Patchwork (AU) -> Plugin (VST3)
Logic: Patchwork (AU) -> Plugin (AU)

I bought Patchwork mainly in order to load multiple Nebula instances there. But now this doesn't work anymore :-( since switching to M1.

I installed by accident first the demo version. Then uninstalled manually in order to install the licensed version. This was also a pain. couldn't find an uninstaller. Maybe this is the reason why it won't load Nebula?

There is no need to uninstall the demo: the full version will simply replace the demo.

Regarding your issue I guess that it depends if the plug-ins are M1-native or not. Your DAW may include a bridge to load either M1 or non-M1 plug-ins, but PatchWork does not do that. If loaded as a native M1 plug-in, it will only load native M1 plug-ins. When loaded as an Intel binary thru Rosetta, it will only load Intel plug-ins.

If you still need to load plug-ins that are not yet compatible with the M1 processor, it is recommended to use your entire DAW in Rosetta mode (as explained here). This way you will be able to load all your older plug-ins thru PatchWork.

I just wanted to give you the heads up that a new preview of PatchWork that supports non-M1 Audio Unit plug-ins without being launched under Rosetta is now available. You should be able to load older non-M1 plug-ins (as Audio Units only) even when running PatchWork in native M1 mode.
