I must be dumb, but why can I not pan sfz? I don't see any place to pan, other than on the "volume and pan filter" and that apparently doesn't work on a MIDI channel.
Any help would be appreciated.

if sfz supports pan as a MIDI CC you can just use that.
If memory serves, pan is normally CC 10.
Otherwise you can automate tracktion's level/pan control by using the 'a' automation option.

Also check this thread for "sfz buddy" by nicfit. He adresses some problem of using it with Tracktion, but check it out anyway.

That's just it. Unless I am missing something obvious, the Vol/Pan Filter doesn't pan the sound on a MIDI channel.
I also tried the automation option and it didn't do anything either.
The sfz buddy download link didn't work.

errm, you don't want to pan the the MIDI channel, you want to pan the audio out of sfz, surely?
lets say you place sfz on track 1, the you have a vol/pan to the right of the sfz filter icon. Any midi clips on track one will play through sfz. Any changes made to the vol/pan on track one will affect the level.
