In Settings - Smart Interpolation option keeps switching to Normal. I set it to High since it says that is the (default) setting but it seems to randomly switch back to Normal from day to day.
I’ve noticed it recently in MDynamicsMB when I switched it yesterday and now today when I open up the same instance of mdynamicsmb in my session it is set to Normal again.

I've had the same problem for ages. I assumed it was one of the default preset systems, either in my DAW (Reaper) or Melda's own one... but perhaps it's a bug after all.

Update: I notice now that it changes depending on which Easy Panel I select.
So in MdynamicMB, if I set it to High(default) then switch from Bass panel to De-esser or Radio Master etc. That will switch my Setting to Normal automatically.
*this isn’t a huge problem since I don’t notice any obvious difference. I’m just curious because I’m using Melda plugs more and for everything

This setting is saved per preset. So every single preset has its own value. In order to make it the default value you have to press the "Set default settings" button.
If the problem is you are doing this I said, and the value is not saved, try to update to version 15.02, as I had some problems with some settings being saved too in older versions.

Tryed Set Default (on 15.02) but still gets over-ridden when I switch edit panels or presets

When you switch device or preset it will neccesarily be over-ridden, because each one of them has its own per-preset saved value as I said (all of them are probably set to "Normal").
However it should not happen if you set it to "High", save the project, and reload the project.

Yes, it needs to be like that, since different devices may require different values. Usually Normal is just fine, but for complex modulations for example the device need something better in exchange for additional CPU.
