I have lots of old projects that I'm revisiting in M9, but I'm finding they were last "updated" in Mulab 7.
So, I was wondering if is there a way to get Mulab 9 or 8 to update them automatically "in the background" or to just set it updating a batch when I'm not using the Pc. I suspect there isn't , but I keep learning and finding new things in Mulab and there's lots "hidden" in Mulab.

In MuLab 8 use MuLab menu -> Tools -> Upgrade Projects.
Depending on your projects it may not be 100% in the background, for example when there would be missing audio files there will be a question about that.
Tip: Also see the "List MuTools File Versions" tool and set extension to *.MuProject
It may help to analyse your MuProject library.

The "Upgrade Projects" function will scan the folder you've indicated and will then upgrade = open + save each of the found project files. If no issues popup during upgrading these projects you can go for a tea or coffee meanwhile, but if there are issues (eg audio files not found or issues reported by VSTs) then alert dialogs may popup.
It indeed is a good idea to make a backup before doing such upgrade.
