aftertouch refers to the ability to vary the pressure on a key after the initial note on.
Most decent control synths can detect the change in pressure and send an aftertouch message via midi.
There is two types of after touch, either key or channel. Channel is used by cheaper control keyboards that don't support individual pressure sensors for every key.

Believe it or not, my 1989 vintage Ensoniq VFX-SD keyboard has key aftertouch, and of course it's supported within the internal synth.
I didn't find myself using it much, except on a few patches that were pre-programed to open up filters based on key pressure. It was cool to do on some synth-brass held chords - to wash the filter over the chord based on individual key pressure.
This is my only midi input device for T, excepting the mouse of course.

I've got a VFX-SD myself.I use poly pressure more for things like different vibratos for each note and things like that.Tie it to oscillator detune and you can get a different "chorus" amount for each note as well.
POly pressure's definitely cool-I wish more developers would support poly pressure AND release velocity(my other two MIDI boards,a Matrix-6 and a K5,transmit release velocity).
