Memory moon ME80, does something cool,
if you hold down the right click on the mouse,
and run it up and down the keys in the GUI,
it sounds like a theremin. Or playing with the mod wheel.
But MuLab wont record me doing that.
It doesn't record things played from the Kontakt GUI keyboard either,
so I suspect that its not doing that.
Is there a setting that I can choose?

Are there events emitted by the plugin? Use the event monitor module to check. If so, plug an event recorder in, or route to another track / sequencer.

I'm not sure how to do that.
But the point being, that I tried with a few more VST's with a keyboard in their own GUI,
I tried Monique, 2Rule synth, Roland Cloud D-50, and MuLab will record from by midi hardware, like normal, but not from the keys in the GUI. On any of them.
I'm probably assuming that that does not work on yours either?
I was hoping that its a setting that may be off by default, like key monitoring.

If the plugin has no event output, then it cannot send events out. That's why the first thing you need to do is check that. If it does have an event output, you then need to see whether it sends its internal virtual keyboard events out. No one else can do this for you. They're your plugins.
