Using MPE with my Jamstik guitar MIDI controller

I've given up waiting for a response from the dev team (three weeks and counting) so hoping someone out there has done this before...

My Jamstik MIDI guitar uses MPE mode by default and sends ‘MPE data’ on MIDI channel 1 and each string on MIDI channel 2-7. It can also be set up (if the plugin doesn’t support MPE) to send in multi-channel mode (each string on channel 1-6) or single channel mode (all data on channel 1).
1. How do I set up Waveform in MPE mode so I can record/edit in each of these modes?
2. How can I see what MIDI data is included in each channel including ‘MPE data’
3. How can I configure a different plugin or sound-bank on each string/channel in MPE or multi mode?
