As usual - I am intrigued, happy to help - but stupid.
Before I can jump in, i have the hurdle that I do not get the setting to work
I have a Native MK3 keyboard. I am using the Drivenbymoss script. I have used the remote control editor of Bitwig before. So far so good.
Let,s take the example of Chromaphone: The vst3-xxxx folder including the controls file is definitely inside the correct settings/ devices folder.
Then I open up Bitwig - in this case Chromaphone - and I should actually by default be able to access the automatically linked Macros anyway. Which I can not, but I should obviously also see additional remote contol elements. Which I do not.
Where am I wrong?

Not sure but I guess maybe you have not installed it correctly? It should be added as it is when unzipped with the folder it is in which will be named vst3-xxxxxxxxxxxxxxx (a string of numbers corresponding to the plugin ID)
If it is installed in the correct folder it should load automatically with the plugin and can be accessed via the device panel or quick controls (which pop up when you use a compatible controller such as the Kontrol keyboard)
One possibility - have you switched your Kontrol keyboard to plugin control mode, rather than mixer mode, using the assignable key on the keyboard which is setup in the MOSS script settings? (I assigned mine to METRO but by default it is assigned to STOP)

Thanks for your patience and insights. So besides setting everything up accordingly the above pops-up when opening Chromaphone? I am on Bitwig 5.2.3. Might this be related to my issue?
Fact is - I can set-up my own mappings properly. They are also being saved in the appropriate folder. But any added mapping files are not working for me at all.

It might be - I can't remember how long ago that particular remote control was made - any that were made in a later version of Bitwig won't work in an earlier version
The fact that the ones you make, and presumably those for built in devices, work, suggests either it is an import issue (but you do not appear to be making any obvious errors) or a compatibility one
To test this hypothesis, try some of the earlier ones in this thread

Here's a draft mapping for Spline VST3 - so far no fx, not worked out a way to add those usefully yet (too many)
