Deleting entries in the note action map doesn't seem to work for me. I tried left-click and selecting "none" as well as dragging a new clip on the key. The old scene/clip is not visible any more, but it gets triggered by my controller and by the virtual keyboard.
Also not a bug, but would it be possible for the keyboard in the note action map to highlight the pressed key, like the virtual keyboard usually does? This would help figuring out the right key on controllers that do not use a piano layout.

been playing around some more with mainly audio recording and 2 things come to mind:
first is the need to "convert to audio sequence part" in matrix clips to loop them. i think the matrix clip recording should be same as in linear screen without need to "convert". for instance, you cannot change gain as it plays because it is a midi triggered clip rather than an audio stream. this true streaming audio in matrix would bring m9 up to another level in my opinion.
secondly, i can find no way to sync play track clips at same time as recording from a metronome count in in matrix. usually i record a loop, select another track and on metronome count in i play along with 1st track i recorded while recording a second.
seems stable now on 9.05 with no crashed and less logging when exit prog.

But i understand what you and other users want:
Record audio in a live cell and instantly be able to loop & stretch it, like a sample. Right?
I have taken note about that.
Not yet decided if that will be for M9.0 or a later version.

I had mapped a key to play a scene, then unmapped that key by selecting "None" and indeed playing that key did not play that scene anymore. As intended.
Can you pls doublecheck on your side and if you can repeat it with M9.0.5 pls give a precise step by step for how to repeat this issue. Thanks.

What you describe sounds like you have converted an audio stream to an audio sequence, and that you chose to not create markers yet to stretch the audio sequence so to match the loop length. So that will timestretch the sample as a whole, without any transient markers and this leads to what you describe. Please read the info above to get more background. (meant as a mild and gentle suggestion)

When a composer is inserted into a rack and is right-clicked, there is no delete or cut option to get rid of it.

I gave it a quick go and I could indeed not reproduce it. Playing the "old" scene after dragging another one on the key happened again, but I could not repeat it. I will try to find out later what it is. I have a feeling it is somehow connected to switching back and forth between midi channels. the behaviour is intermitent not every time as i stated earlier (last night it started doing it every time for some reason); sometimes it is fine and sometimes it fades/flanges. the unexpected behaviour doesn't begin until after the audio has been playing for 5 bars and continues until clip ends. on shorter loops of 4 bars and less it hasn't been happening. i have used 2 diff audio interfaces to eliminate that as possibility but it does it with both interfaces.

Personally i have no indication there would be a bug in that area. And i also think there is no need at all to switch audio interfaces. At this point i still think it's a user issue. Did you read those doc pages? The reason why the converted audio sequence does not immediately have the same tempo is because your audio recording has some tail which is also regarded as audio that must be looped.
Solution: When converting to audio sequence, disable "Auto Snap Length". (but keep "Create Transient Markers" enabled)
Then open the audio sequence editor and set the loop end at 9.1.000 so to cut off that tail that should not be in the loop.
