Hi - yes, that is what I'd suggest. I'd never tried doing that with an M1 mac, so can't comment!
If you were to get Wotja Pro 21, that one purchase gives you versions for all of iOS, macOS and tvOS.
Best wishes,
Pete

Just seen this thread ... ahhh ... memories of Koan X, and Pro ... remember embedding Koan X things in web pages very early on! It did work! [many moons have passed with retirement and other stuff since then, my uni computing support days!]
Just good to see an upsurge in generative music and other apps to support this. Brian Eno gave a great talk and demoed the 2 tape recorders and tape loops stuff - nice guy! Now that WAS a long time ago, way before software, just razor blades and splicing tape!
I would love to see a Windows VST version - but even with a standalone, LoopMidi etc can be an answer for capture. Do you still cook and bake the midi's out to file - not looked at the s/ware for some time. Forgive me for not RTFM-ing.

Yes, Wotja has a built-in recorder, so you can record your Wotja mixes to WAV or MID format.
And, of course, it includes MIDI, so can can (say) route your MIDI from Wotja to your favourite DAW.
Why not give the free version of Wotja 21 a go? Much of it will feel very new, and much of it will also be familiar due to your Koan background. Wotja can even load old Koan Pro files (!) - which is quite something, I think! We've worked hard to "curate" older features in Wotja, as well as adding new cool stuff as fast as we can.
With very best wishes,
Pete
