USER DEFINABLE FUNCTIONS with HOT KEYS
I use Cubase VST for my day job. One of it's most powerful and time-saving features is the "Logical Editor". For those that don't know, it allows a set of rules to be defined to filter MIDI messages, followed by another set to modify the selected events.
This allows the user to define their own custom functions.. and VST allows these to be linked to hot keys!! As far as I can tell this feature (the key bindings, not the logical editor) has still not appeared in SX (someone please correct me if I'm wrong..)
If there is one feature you could add that might wean me off VST at work, this is it
MORE CONSISTENCY WHEN EDITING DIFFERENT TYPES OF CLIP
Clicking on the background (for example) should always have the same effect IMHO for a (even!) shallower learning curve.
I would also like to be able to render MIDI clips through MIDI only plug-ins, in the same way that I can with audio.. even better if I could drag MIDI filters onto MIDI clips: Imagine a MIDI clip with a VSTi running on it; you could have ONE track with umpteen different synths for different sections.. or you could copy a MIDI clip a bunch of times, but run a different VSTi on each, etc..

Grooves need sorting out, I miss those badly.
I really like the non-destructive quantise available for a clip: however, I would like to be able to apply this destructively once I'm happy with it. I would also like to be able to quantise selections of notes in the MIDI editor with the same percentage slider.
Thought of that myself.. must be a good idea
If the western diatonic scales were offered as templates, with "accidentals" where needed it might make users of classical notation more comfortable.. it would probably make the piano roll easier to "read" for everyone else too, unless they are particularly atonal

linking vst params to the piano roll... do you mean editing them in a cc environment, a la velocity, rather than with the automation lines?

The way I see it, the parameters are offen changed in relation to a phrase or a part or even a note. When you move that data (also audio clips!) you should be able to quickly and easily move the VST parameter data as well. The best way I see to do this is to embed the parameter changes in the clip/note (still viewable from track) so that they are part of that clip/note whatever. Attach it so to speak.
If the VST data is created in the clip then it stays in position relative to the clip/note. If it is created on the track then it stays in place relative to the song position.
(To all of you who have tracked, it's a bit like the way a line in a tracker can contain a note and a parameter. You can cut copy and paste and sometimes drag this note around and it's easy to select either the note or the parameter, or the whole entier line. The parameter can be coupled to the note and thus the phrase.)

It would be nice if there was an button to bring up a score/sheet music editor. It would be much easier to transcribe music from a book when you can't play it!

Not sure if this has been mentioned already, because this thread is getting quite big now, but....
How about the ability to lock a note to its pitch while you're dragging and moving it? Unless you've got a very steady hand when moving your mouse, you always end up moving the note to a different pitch. Currently the only workaround I've got is to zoom in so far that the 'depth' of each note becomes so large that it mkaes it a lot harder to accidentally move it up or down when you only wanted to move it left or right.

Another important thing is to be able to "see" controller data. IE When I import a midi file someone has emailed me I have to select the notes then select whatever controller data I want to view. Well with out knowing what the creator has put in it is quit tedious to find all the different parameters he has automated. It would be nice if a midi clip also showed controller data in the edit window as well as the notes simultaneously.

I'd like to be able to configure the mouse-wheel just like any other button or key (this isn't possible now, is it?)
The default of the mousewheel zooming is a little strange. I'd much rather use it for transport left/right (currently shift-mwheel does this) and use shift-mwheel for zooming.
Sorry if that is slightly OT to the piano roll situation, but it seriously impacts my workflow using the pianoroll anyway.
