OK, so this I'm sure has been obvious for a long time, but I've never WANTED it before until I recently just looked for it. And there it was! That was a moment of user delight.
Context: I wanted to use a MIDI keyboard along with my iPhone as I try out some MIDI controller iOS apps (e.g., Ribn, KRFT, Knob Lab, etc.) on the same instrument.
Delighted: Just realized each track can have multiple inputs (duh, right?)

Yes, despite what is probably a great effort to keep things simple, there's a LOT going on under the covers; and I would think that most users probably realize / use about 10% of the capabilities.
This either through not feeling the need to do so, or not realizing the feature is there, but hiding behind a tiny icon in a corner of the track display, or accessible through a right-click or obscure keyboard combination.
