It doesn't have a root note selection per sé, we simply treat 0V as the root. Typically 0V is considered a C though, but in the modular context it can be anything. We had hoped that we'd get away with that - simply also because we haven't had a good idea about how to do that without making CVilization a lot more complicated to use, or sacrifice other features.
Anyhow, if there's demand, we're happy to hear suggestions and I'm sure we could squeeze that into a firmware update. One idea we're happy to offer in the future is to optionally convert the "In-Scale Transpose" feature from the Matrix Mixer into a root note selection. Another alternative would be an option to set the root note via CV-B.
A quick solution right now is to record any scale with the desired root note. That's pretty straight forward if you have a keyboard with standard 1V/octave Gate/CV outputs.
The default scales are described in the User Guide on page 22 and in the Cheat Sheet at the bottom of the Matrix Mixer section.

There are cv inputs so it would no problem to send a root note via cv. Bit also the 4th Knob in the quantize menue has no funktion. So it could also be an option to select there a root note.
