I'm looking at a new Intel 13900ks and saw lack of avx512 instructions, does it matter at all?
Some projects are heavy melda and so it's a consideration... Not sure if it's only minor or only important in certain situations?
Avx2 Vs avx512 performance?

Nope imho. I think they removed it because it turns out AVX512 rarely gains relevant performance increase. The problem is while the instructions have bigger bandwidth, there's only a limited number of arithmetics units and usually lower than that, so executing 1 AVX512 instruction vs. 2 AVX2 instructions usually leads to similar results. Especially with audio where it's common to use "lots of multiplications in series" etc.
