Has anyone used this? All the demo are for Logic and I'm not making the correlation.
Cause I'm kinna dense. I was hoping to use it to record drums to start with, but I'm not getting it.

I have not, but going by the description on the web site, it looks like it is a MIDI plugin. If that is the case, you would put it before the synth plugin on the track where you want it to play.

IT's described as a MIDI Instrument by Vochlea. I can get it to record now, but I can't get it to play back.

First, it is not an instrument and it is not a plug-in. It is a MIDI input device.
It will allow you to use your voice to create MIDI input in a number of types. It can create MIDI notes that are like drums, or chords, or individual notes for whatever purpose you need.
You make noises at it and it will convert your noises into appropriate MIDI notes for your DAW to record.
And that is its purpose. To get MIDI notes into your DAW.
Playback is another thing entirely. You need to add relevant instrument plug-ins to each track you've recorded MIDI into so your DAW can convert the MIDI you recoded from Dubler into audio (it's possible that Dubler 2 came with plug-ins for you to use but you can use any instrument plug-ins you want).
I see you've been on KVR for a long time so you probably have instrument plug-ins that you can use to get the MIDI to give you audio.
