I know that I can designate two adjacent tracks as stereo. Is there any way, like in other DAWs with a pan control button, to both adjust the amount of stereo effect and/or to assign multiple tracks to either the right or left channel?

The pan and volume are in the same built-in control. Move it up and down for volume and left and right to pan. I guess you could also put tracks within a group track and set the group track to the left or right.
[W10-64, T5/6/7/W8/9/10/11/12/13, 32(to W8)&64 all, Spike],[W7-32, T5/6/7/W8, Gina16] everything underused.

It may depend on your scale. It might look like just a little dot ABOVE the volume control. When you click it, it expands.
