When CC messages from a hardware controller are assigned to Zebra parameters with the midi learn function (ctrl click), the parameters are changed. Of course one has to turn a knob to tell Zebra which CC is used, but this immediately alters the parameter setting.
It would be better if Zebra ignored parameter changes in midi learn mode, because otherwise it is not possible (or very difficult) to save the preset with its exact initial parameter settings AND the assignment of the CCs.
Or maybe I'm doing something wrong?

yeah, assigning them alters the parameter value. I don't see a chance not to do this with the current model.
However, as I'm working on Midi Learn for my new engine (also for Zebra2). Maybe I can come up with something that does a better job...
To avoid this in Zebra, go to Settings and use a *global* MidiCC Map rather than *preset*. Then you just do it once and are done...
