Anyway - trying it now for the first time - how come I can't drag an interface to a track? I liked that. I can't see how to play a VSTi now - there's no midi input arrow to drag across.

I agree, and if you had several inputs from the same source, and they were buried underneath each other and you couldn't control where they started out when you opened a project. I really like the new way. Much easier and less clutter. It looks better. Not having all those scattered icons kind of cleans up the appearance for me.

I can see how they could both be be useful in different contexts - nice to have choices anyway.
Now back to the "unlock options" question
Does this mean you can register this thing and use it without the limitations?

If you are referring to the register stuff, I don't think they do anything right now. They may well connect to a server (I've haven't bothered to watch outbound TCP/IP) but if so, I doubt there is anything listening that cares right now.
