Williams also did the theme for the old Lost In Space, which is actually pretty cool. He was credited as 'Johnny Williams.'

Well, you didn't really define what you meant with "theme music". People seem to have assumed you were talking about movie soundtracks. Not necessarily. But if we are talking about "theme music" in movie soundtracks, I would say that Vangelis would be a serious candidate for me. Chariots of Fire, Blade Runner, 1492, all could easily qualify. I did a compilation of great movie themes in the Summer, and even excluding everything from Vangelis and Hans Zimmer (because those have a special place in my library) as well as the soundtracks from Star Wars and The Lord of Rings, I still had to force me to stop at 150 themes.
Anyway, maybe the best movie theme of all time is the theme of Tara from "Gone With the Wind" (composed by Max Steiner).

Yet nothing compares with the opening scene of "2001: A Space Odyssey". The introduction of "Also Sprach Zarathustra" from Richard Strauss, coupled with the movie scene, still gives me thrills (jump to 6:00):
