As I understand it so far - the interpolation is a set formula and method which cannot be changed. Is this correct?

Very likely, yes. This is most probably done with the magic of FFTs, averaging things in the frequency domain. The FFT aspect is massively complex, but once you get the resultant frequency-domain tables, making an intermediate version of two wave forms is simple arithmetic ... and then it's back the other way with an inverse FFT.

If this is true you could simulate it with standard Oscillator in Harmonics mode and a "Banks Mode" Modulator "banking" all the harmonics, couldn't you?

Alas. I was hoping for new ideas and other methods to do the interpolating such as spectral or maybe even granular.

Comes down to the same thing in the end. Harmonics mode almost certainly feeds an inverse FFT to get the resultant waveform. I don't mean to imply that I've examined the code (thankfully!), but I'd be very surprised if some other technique was in play here.

What is this, please…?

How's it differ from Wave-knob modulation, and how exactly to achieve it with the available controls in any of the WT module panels (a pasted example would be great!)?

I think he/she just means loading two OSCs and volume crossfading between them. The relative level means the transition curve from one to the other.
