u-he's system of offering public beta discounts and then almost never doing sales again works well. It actually confuses me when they do run sales because they're one of the few developers that have made it work. Also, it helps that they don't release a lot of new versions or rely on upgrades. That sales model wouldn't work as well for iZotope, for example.
But does the iZotope style of sales model work as well for consumers?

Yes, it does. Think of each iZotope version as a product life cycle, you're going to get a better deal based on what stage it is at. If iZotope did things like u-he, the products would be priced at the cash cow stage all the time and that isn't good.

Also, iZotope's sales model means they're beholden to add marketable features to keep people upgrading. Personally, I would be happy to pay for DIVA to get major upgrades every year.

What I really don't like about it, that it has no DAW parameter mapping. You have to map everything through MIDI. That's really cumbersome! (At least in Ableton Live)
I haven't used Syntronik yet, but do I understand you correctly that it doesn't have assignable automation like SampleTank? I know you can load Syntronik libraries into SampleTank. Then you don't have the synth interface, but you can at least use the sounds.

Yes, no assignable automation in Syntronik.
Yes in SampleTank it works, but the SampleTank Interface has really bad contrast IMO and it doesn't "feel" the same as working in Syntronik (with the more authentic synth GUIS).
I really don't get, why they didn't add the same automation mapping as in SampleTank. (I bet it uses the same framework)

Buying AmpliTube 5 Upgrade in Custom Shop cost 200 Credits, which can be bought in IK Store at €159. That can be reduced further for 30% using JamPoints down to €112.
