does TouchOSC have any physics control? maybe you can put a few buttons on the top, like on/off bounce from wall etc

Not that I've seen directly, but it offers ability to write scripts. So in theory you can put physics in there if you can port it to the scripting language of TouchOSC. Would be quite an effort, though!

I have found the EARE Touch to be the best solution so far.

Very easy to set up 4 XY (z) controls, you can save a dozen different layouts
It’s a very capable MPE board as well, you can even use it as a drum pad!
X32 and 24C mixers, S88MK3, Live + PUSH 3, Osmose, RedShift 6, Pro3, S4, Tempera, Syntakt, Digitone, OP1-F, OPXY, TR-1000, Eurorack, TD27 Drums, Guitars, Basses, Amps and of course lots of pedals!

Here's the last state, also including a controller for the phone, where controls are distributed across 3 tabs.

The problem with all solutions I've tried is.... 127 steps per CC. The XY pads CAN respond to 14-bit midi or 14-bit control via automation in a DAW/host (like Bidule), but I haven't found any way to get 8 14-bit dual-CC messages from an ergonomic hardware (or multi-touch tablet/surface) option that can also support midi pickup / takeover reliably. The Joue is the closest. 127 steps just isn't enough for the kind of subtle control the XY pads cry out for.
A small fader unit like the Korg NanoKontrol or a Faderfox would work if only they had higher resolution. The motorized fader options are too bulky, noisy and/or fiddly for live performance.
I would pay so much for this. I really would. I literally dream about it.

We are working on some kind of X/Y pad controller, with a motion sampler integrated. It's ment to be used for 3D Audio panning, but we also plan for simple X/Y control: https://doc.a3-audio.com/assembly/moc.html

However, it's still in prototype phase, going to have MIDI and also OSC for high resolution.
