Noisemaker is complete and at the same time easy to understand because of the clear layout. And it is more appealing than Charlatan in my view.

Another advantage of Noizemaker is that it has an internal patch manager so that people can save their patches where they want, which some DAW's don't allow.

For a fairly old freeware and despite the recent slew of amazing analog modelled synth plugins, the sound of Noisemaker is still standing strong.
xoxos also has a tutorial synth called Clearsynth, it's very stripped down but it has a series of patches which show off methodically each of the classic subtractive synthesis techniques, with no extra details to each patch to cloud the issue. I'd have found this super helpful when I was learning.

+1 for Charlatan or Noisemaker. Everything else will probably have too many functions, a too cluttered GUI, or will be too unusual, like Firebird, which has quite unusual functions in the oscillator section. Charlatan and Noisemaker are totally straight forward, and only have the necessary functionality.

I'd say Charlatan or Tyrell, even though Tyrell is bit more complicated for a beginner.

Welcome Mr. Powers! I'd like to recommend synth 1 because it has so many great tutorials and presets to learn from.
Edit: rethinking your criteria, Charlatan is very basic and straightforward. That may be a better choise.

because it sounds good...simple but attractive GUI...no effects...low processor demand so it works well with older computers.
As its creator said: The design philosophy was to provide a feature set just flexible enough to cover a wide range of sounds while deliberately abstaining from countless parameters and modulation options cluttering the user interface and distracting from the creative process.
Great synth and good tool for teaching synthesis!

Can't understand the lack of respect for Prodigious it smokes all the others mentioned so far when it comes to shredding leads and it has the best solina string sound I have heard on any free synth. Also if you don't mind an occasional noise glitch that is really not very noticeable you might try the memory moon synths which are from the same guy that did minimogue VA. Both the messiah and memorymoon are spot on and I use to own a memerymoog so I can personally vouch for its authenticity. Messiah is better sounding at the prophet thing than prodigious but both have a great sound and I like them both. Adding them to your arsenal is very inexpensive $40 for both is a total no brainer if you can handle much more than that email Bulent at KV331 and he might cut you a deal on synthmaster for your students.
Synth 1 has lots of presets available if that is important. Dune BE is FREE! and very popular and my fave for pads from free vsti's. Voyager is cool and very nice but I heard it has problems in reaper when using the lime skins.
Tube ohm's antitranspirant is a great monophonic option. If you value pads and that sort of sound over lead synth sounds I would also consider PG8X in addition to Dune, synth1, oatmeal, , Sonata from Soha, Sonigen modular would be worth teaching if you want to get into modular sounds. Hurry up and download it because it will be going payware soon from what I hear.
Your students are going to develop their favorites on their own so just tell them to come to this site and use it to find out more. Once they start playing with these and sample a few they will be hooked and learn better on their own.

Doesnt get much more simple than Juno-60 / SH-101, so the demos of TALs U-NO LX and/or BassLine-101 would be perfect for the purpose. Their only limitation is that you cannot save presets, otherwise they are fully functional.
